La Prudencia Paleta Matanza Gran Reserva
Gran Reserva shoulder comes from the front legs of Serrano pigs, fed exclusively with natural cereals and raised in freedom, reaching over 150 kg.
Its low salt content means that our Serrano’s shoulder needs a minimum maturation process of 18 months. Prepared with our traditional salting, drying, ageing and curing process in natural cellars, with the greatest care, to obtain a unique delicacy with special features.
La Prudencia is one of the few companies in Spain that produces its Serranos products just like the Iberians.
Curing: 18 months
Characteristics: An unmistakeable colour from pink to purple-red, and fat of brilliant appearance. A delicate flavour, low in salt, with a pleasant, exclusive aroma.
