Japanese sansho or prickly ash is loved by Japanese food lovers around the world. Made from the berries of the prickly ash, has a tangy, slightly lemon flavor and is often used in dishes like yakitori and eel to balance fatty flavors. It is also good with miso soup or osuimono (clear soup), and can be used in various meat or fish dishes in place of pepper and chili pepper. A dash of sansho pepper will really liven up a dish.
Other uses for sansho include: sprinkle on tempura or noodles, use as a condiment on shabu shabu or hotpot dishes, combine with salt and herbs to make a savory crust for meat and fish dishes.
