Prosciutto di San Daniele is recognized as one of the most prized hams internationally, it is a DOP (protected designation of origin), produced exclusively in Friuli Venezia Giulia in the territory of San Daniele del Friuli. The birth of this ham begins with the careful selection of the raw material, the thighs, coming only from the finest Italian heavy pigs. The following processing phase is salting, followed by rest, washing and drying, seasoning and greasing. The only element used to start the curing process is sea salt and nothing else. It gets its aromatic, sweet flavor from the local microclimate, the perfect combination of mountain air and the Adriatic Sea San Daniele ham stands out from all the others for its typical guitar shape and for the presence of the paw in the cured leg.

Founded in 1955, DOK Dall’Ava has since become a leader in the production of Prosciutto di San Daniele, using techniques that make for a traditional prosciutto crudo just the way founder Natalino himself made it from the beginning. Their prosciutto is produced from start to finish in San Daniele, a small village in Italy’s northern region of Friuli Venezia Giulia, where the combination of intoxicating air from the mountains and the Adriatic Sea makes the perfect place to age prosciutto.
