Umeboshi is usually eaten with rice, placed on top of plain rice, rice porridge (okayu), or in ochazuke. It’s also a popular filling for rice balls (onigiri). Ume plums should not be eaten raw, as they have a bitter taste and can upset your stomach if unripe. They are typically pickled, fermented, or cooked and are widely used in Asia. In Japan, ume plums are used to make umeshu, a sweet plum wine.
