Ice cider

Hibernis is a single-variety ice cider made from Verdialona apples grown on our farm in San Justo. The apples are hand-picked in late December, when they’re overripe, and gently pressed to extract the rich “flower must.”
This juice is cryoconcentrated to boost natural sugars (at least 35° Brix), balanced acidity, and intense ripe apple aromas. It ferments and matures for at least 6 months in temperature-controlled stainless steel tanks, then finishes with 6 weeks of aging in French oak barrels. The result is a refined ice cider with 11.5% alcohol.
