Manchego is a DOP cheese made from the milk of the Manchega sheep. Aged for 6 months, this version is semi-firm in texture, but also soft and creamy. It has a slightly nutty flavor with buttery undertones and a subtly tangy finish. It is easily recognized by its herringbone pattern on the rind.
