This specialty dry cured sausage was made at an altitude of 700m to give it a delicious smoky flavor and an unusual ingot shape. The sausage was dried on a flat grill, leaving fine stripes on the underside of the ingot. Made with a combination of lean meat and fat, it is seasoned with various spices and sugar to give it its distinct flavor.
