Idiazabal is naturally smoked with a hard, orange-brown rind. People love its perfume-y bouquet, and rich, buttery flavor. It is known as one of Spain’s greatest cheeses. Idiazabal cheese is delicious when sliced or grated onto grilled dishes or eaten plain as a snack. It is a good melting cheese and can add a nice flavor to salads and appetizers.
